Blueberry Plum Compote
Ingredients:
1 cup fresh blueberries
3-4 ripe red plums chopped into small pieces
1 tbsp chopped fresh thyme
1 tsp lemon zest
1 tbsp lemon juice
1 tsp vanilla
2 tbsp maple syrup
1 pinch kosher salt
1 tsp cornstarch
ā cup water
Method:
Add all ingredients to a pot and stir well to incorporate
Bring the mixture to a boil on the stovetop and then lower heat to a simmer. As you bring the compote to a boil, stirring frequently is essential to prevent the ingredients from sticking to the bottom of the pot.
Stirring frequently, simmer mixture until the compote thickens. The blueberries will burst and much of the liquid will evaporate.
When the compote is almost at the desired thickness, remove from the heat and allow to cool for 15-20 minutes. The compote will continue to thicken as it cools.
Additional note:
Fresh or frozen fruit may be used for this recipe
