Just writing this down for future reference, suggestions welcome.
Ingredients for 4-5 people
400g spaghetti (I also like bucatini or rigatoni)
4 egg yolks and 2 whole eggs
100g guanciale (pancetta is okay if you can't get guanciale)
100g parmigiano reggiano (maybe some pecorino as well, depending how I'm feeling...)
salt and pepper
Steps
Boil pasta in salty water
Cut guanciale into little batons and cook on medium heat til golden brown, no extra oil needed
Combine eggs, yolks, pepper and cheese (grated finely) into a bowl and mix well. Add a splash of pasta water. Important: While you're doing this have your cooking partner make whisky sours with the egg whites.
Remove oil (some people also remove guanciale) from pan, Add pasta to guanciale pan, toss well, take off the heat, toss more to reduce heat.
Season with pepper, cheese and serve
